A recipe for Dungeness Crab Risotto, instructed/prepared by Ramsay's sous chef Scott. You don't have to register to watch it. I've just given a link to the video because Hulu videos don't work very well with flash tags on forums, so far.
I've made this a couple of times, as long as you get the rice right, it's delicious. You can substitute the crab with lobster if you'd like (although dungeness crab is fantasic and well worth the price), but if you go that route be sure the lobster is the very last thing you add as it's pretty fragile once it's cooked, so if you start cooking it again for too long it will just fall apart and disappear and people will wonder where in the hell the lobster flavor came from. To stress the point, the rice is the most important part, and it's also the easiest part to screw up, heh. Once the rice is nearly done, just keep stirring and tasting until it's just right.
