Tana Ramsay

When I met Tana Ramsay, British celebrity chef Gordon Ramsay's wife, she was as soft-spoken as he is brash. But the recipes I tried from her Home Made cookbook convinced me that not only could she cook, but that her four kids eat pretty well.

This was a hit with my children and something I will make over and over again.

INGREDIENTS

1 lb (450 g) yellow mini potatoes

3 tbsp olive oil

2 oz (75 g) feta, in small pieces

3 tbsp fresh mint, chopped

1 lemon, zested + juice from half lemon

Salt + pepper to taste

DIRECTIONS

Put potatoes in large pot; cover with water and add pinch of salt. Bring to boil and cook until almost done, about 12 minutes. Drain.

Place potatoes on no-stick baking sheet with sides; crush gently with back of fork.

Drizzle oil over top, sprinkle with feta, mint and lemon zest; squeeze lemon juice over top. Gently mix together. Bake in 375F oven about 25 minutes until potatoes begin to crisp around edges. Season with salt and pepper. Serves 4.
