First of all, I have to say that I thoroughly enjoy Kitchen Nightmares.  During The Priory episode, when Gordon inspected the filthy kitchen, he blasted the staff for warm meat in the refrigerator.  The reason was bacteria growth.  Did I misunderstand the complaint?  I thought that was a safe practice, can someone explain further?

wasn't the problem more the way it was wrapped.  Keeps the heat inside longer.  I understood you were to loosely wrap, at least until cool.
