After its makeover by Gordon Ramsay, The Priory Grill at Haywards Heath has welcomed another master of the kitchen with the appointment of new head chef Aimé Zbinden.
Aimé was raised in Sussex but later trained as a chef in his native Switzerland. He has worked at The Hilton Brighton Metropole and The Copthorne Hotel, Gatwick, which he helped to gain AA Guide recognition.
His first head chef position was at country house hotel Brands Hatch Place in Kent, where he gained two AA rosettes.
Aimé said: "I'm really looking forward to working at The Priory, and with my newly designed menus I will ensure every diner who comes through our doors goes away nothing le
ss than satisfied."
The Priory Grill was re-launched as part of the Channel 4 series Ramsay's Kitchen Nightmares. Aime's first move has been to re-work the restaurant's grill menu, to incorporate a range of new dishes and introduce a Swiss twist to the menu.
Aimé was recently joined by new senior sous chef James Villiers who previously worked at highly acclaimed gastro pub The Bull in Ditchling.
Food is sourced locally wherever possible, and all meat used on the grill is reared by Sussex based farmers.
Manager Scott Aitchison said: "It has been a very positive change for us. The new brigade of chefs is helping us to produce a superior menu. The food is produced superbly; it is all fresh and locally sourced to support local businesses."
The new series of Ramsay's Kitchen Nightmares has begun and The Priory Restaurant episode is expected to be broadcast at the end of November.
