Adam Daniels, 23, impressed the cook renowned for his no-nonsense approach to beat rivals from across the UK.
This week viewers of Channel 4's Ramsay's Kitchen Nightmares saw tempers fly as he clashed with the owners of Lampeter's Fish and Anchor Restaurant.
But Mr Daniels said he found Ramsay "really encouraging".
Mr Daniels, a final-year student at Birmingham College of Food, Tourism and Creative Studies, won a cook-off between seven finalists at the BBC Good Food Show to win the scholarship.
As well as spending time at one of Ramsay's restaurants he won £2,000, a set of knives and a chef's jacket.
Mr Daniels, from the Dunvant area of Swansea, said: "I am absolutely delighted.
"It was nerve-wracking but I enjoyed the challenge. Gordon and the judges were really encouraging and I have made some great contacts for the future."
For this week's episode of Ramsay's Kitchen Nightmares the chef spent time with Mike and Caron Ciminera at the Fish and Anchor in Lampeter.
Viewers saw several heated exchanges, especially between Mrs Ciminera and Ramsay, as he tried to help the couple turn their business around.
But speaking after the show Mr Ciminera said the arguments had been worth it.
He told the programme's website: "I did feel a couple of his comments were unnecessarily rude... Caron did feel she was being singled out and picked on.
"To a certain extent I felt the whole situation was manipulated slightly, but at the end of the day we had a business deal and for our involvement I get the kind of exposure money just can't buy.
"As for Gordon, both Caron and I think he is a great guy."
Mr Ciminera said the chef's advice had made a big difference to their business.
