Fuscia Restaurant owner Jason McCormick said he was looking forward to competing to be the executive chef at the new Ramsay restaurant which would be the centre of a Channel 9 production.
“It’s really like being a musical conductor. If one thing fails it all comes crashing down,” Mr McCormick said.
“It’s very exhilarating though, I love it.
“Melbourne is the epicentre of food in Australia and we’ve got enough talent in this country to make it a success.”
Originally from Melbourne, the sous chef is looking forward to returning but has big plans for his Enoggera restaurant.
“I will be coming back at least once a fortnight to the restaurant to make sure it’s going well and to see my family,” he said.
“We’re going to have a constantly evolving menu and we’re going to be creating a private balcony area upstairs.
“We’ll have to keep a few of the signature dishes though or I’ll have a mutiny on my hands.”
Mr McCormick said he was planning on poaching a few ideas off Ramsay and hoped the television star would visit his own restaurant in Enoggera.
“If I get the job I think I’ll be able to teach him a few things as well. I’ve got a few tricks up my sleeve,” he said.
“This will be my third time on television, it’s a great medium.
“I’ll be interested to see how (Ramsay) approaches Australian culture because it’s a bit different.”
