I'm willing to bet that the contract for this contest has some stipulations for what happens if Gordon doesn't think the winner is fit to do the job described as the grand prize on the show. I don't think he'd be willing to make a choice to the detriment of his restaurant/brand to make good television.

Also, I agree, I wouldn't really want food from any of this season's contestants, either.
